With Christmas just around the corner, it’s the perfect time to bring you a selection of recipes to add flair to your Christmas dinner. These sides can be made in 30 minutes.
Recipes courtesy of the Co-op. Ingredients can all be purchased from your local branch if you live in the UK. They are also available at markets, supermarkets and imported good shops for those of us who live in Turkey.
Shredded sprout and carrot stir fry
Serves 4 * Ready in 15 minutes
Ingredients
1 tbsp toasted sesame oil
200g brussels sprouts, sliced
1/2 red cabbage, sliced
2 carrots, cut into matchsticks
2 tbsp clear honey
2 tbsp reduced salt dark soy sauce
1/2 tsp Chinese 5 spice
4 spring onions, chopped
2 tsp sesame seeds
Method
Heat the oil on a large wok or frying pan over high heat.
Fry the sprouts, cabbage and carrot for 3-4 mins, tossing often, until starting to soften.
Mix the honey, soy sauce and 5 spice together. Add to the pan along with the spring onion.
Take off the heat and sprinkle with sesame seeds to serve.
Christmas veg rösti
Serves 8 * Ready in 30 mins
Ingredients
3 parsnips, peeled and coarsely grated
2 carrots, peeled and coarsely grated
1 large potato, peeled and coarsely grated
100g brussels sprouts, peeled and finely sliced
100g red cabbage, thinly sliced
1 onion, grated
2 tbsp cornflour
Low-cal cooking spray
4 tbsp reduced-fat crème fraîche (alternatives are sour cream or suzme yogurt)
Freshly chopped herbs to garnish (dill or an alternative of your choice)
Method
Preheat the oven to 220°C/fan 200°C/gas 7.
Line two baking trays with foil
In a large bowl, toss together the vegetables
Season, then stir in the cornflour
Spray the trays all over with low-cal cooking spray
Divide the mixture into 8 mounds across the trays and pat down with the palm of your hand, flattening as much as you can
Spray the tops with more low-cal spray and bake for 20 mins, until golden
Leave to cool on the trays for 5 mins, then gently lift the rösti onto plates or a serving dish
Top each with a little crème fraîche and some freshly chopped herbs, to serve
