Fresh Spinach Day – 16 July 2017
Spinach, especially fresh, is incredibly nutritious while remaining remarkably low in calories. With only 23 calories for every 3.5oz it provides a substantial portion of our daily requirement for multiple vitamins, including Vitamins A, B, B6, E, C, and K, as well as being an incredible source of folate, potassium, and most notably iron.
No wonder it made Popeye so strong, and no wonder Fresh Spinach Day was founded to celebrate this miraculous little plant.
To celebrate here’s a popular Turkish recipe that’s quick and easy to make.
Kremalı Ispanak Yumurta (Eggs with spinach in cream sauce)
Ingredients
1 kg fresh spinach
1 onion
150 grams butter
1/2 litre whole milk
8 eggs (room temperature)
50 grams Kaşar cheese, grated (or Gruyere)
Salt & pepper
Pinch of cayenne pepper
Method
Wash the spinach and boil for 3 minutes or until it wilts.

Dip the spinach into cold water to stop it from wilting any further. Drain and squeeze to remove excess water, then chop on a board.
Brown the onion in 100 grams of the butter.
Add salt, pepper and chopped spinach and cook for a further two minutes.
Pour the mixture into a round, high-sided cake tin and spread evenly. Make eight hollows with the back of a spoon and break an egg into each one
Melt the remaining 50 grams of butter in a medium saucepan over medium-high heat. Slowly add the flour to the melted butter and mix well.
Whisk in the milk. Cook the mixture, stirring slowly and continuously, until the sauce comes to a boil and thickens. Reduce the heat to low and continue cooking until the sauce is the required consistency.
Stir in the grated cheese, salt and pepper and mix well

Pour the sauce over the eggs, sprinkle with cayenne pepper
Preheat the oven to 200°C. Place in the oven until the eggs are cooked.
Serve with fresh bread (ekmek) or toast.
